HQ Grind/Meat Reports toHQ General Manager Job summary
Responsible for overseeing the production and operations in the grind room to ensure product is being produced according to specifications and meets quality and consistency standards. Follow production sheets and schedules to maintain proper inventory. Monitor inventory levels on products to ensure there is an adequate supply at all times. Order the correct product from the correct weekly vendor for grind room production and meat preparation production.
Summary of essential job functions
Complete inventory by counting and completing the extension for the dollar value of the inventory.
Responsible for producing and maintaining the proper product assortment.
Use knives, cleavers, or other equipment to perform meat cutting and trimming.
Clean, trim, slice, and section primals.
Cut, trim, and grind meats, such as beef, pork, poultry, and fish.
Receive, inspect, and store meat upon delivery, to ensure quality.
Inspect meat products for defects, bruises or blemishes and remove them along with any excess fat.
Separate meats and byproducts into specified containers and properly seal containers.
Wrap, weigh, label and price all products.
Estimate requirements and order meat supplies to maintain inventories.
Produce products of high quality while meeting required specifications.
Ensure the quality and freshness of the product throughout the production process.
Minimize shrink and waste (there should be 0 shrink and 0 waste).Follow proper trim specs (e.g. beef top round).Follow recipes exactly and consistently.
Perform counts and ensure all inventory is accounted for and reported according to company policy.
Maintain adequate inventory levels.
Complete specials projects and other duties as assigned.
Timely and consistent attendance.

Complete tasks in a timely and efficient manner.
Ensure logs and proper food handling procedures are met to ensure food safety standards.
Ability to work a flexible schedule including holidays and weekends.
Knowledge, skills and abilities required:
2-3 years previous meat cutter/grind experience preferred.
3-5 years management experience preferred.
Strong interpersonal and verbal communication skills.
Ability to multitask and use organizational skills.
