Salary Range: $16.00 - $18.00 hourly
Job SummaryResponsible for overseeing production and operations in the grind room to ensure products are produced according to specifications, meet quality and consistency standards, and are delivered on schedule. This role includes inventory management, equipment maintenance, and adherence to safety and hygiene regulations.
Essential Job Functions- Complete inventory by counting and valuing the inventory.
- Produce and maintain the proper product assortment.
- Use knives, cleavers, or other equipment to perform meat cutting and trimming.
- Clean, trim, slice, and section primals.
- Cut, trim, and grind meats such as beef, pork, poultry, and fish.
- Receive, inspect, and store meat upon delivery to ensure quality.
- Inspect meat products for defects, bruises, or blemishes and remove them along with excess fat.
- Separate meats and byproducts into specified containers and seal them properly.
- Wrap, weigh, label, and price all products.
- Estimate requirements and order meat supplies to maintain inventories.
- Produce products of high quality while meeting required specifications.
- Ensure the quality and freshness of the product throughout the production process.
- Minimize shrink and waste (target 0 shrink and 0 waste).
- Follow proper trim specifications (e.g., beef top round).
- Follow recipes exactly and consistently.
- Perform counts and ensure all inventory is accounted for and reported according to company policy.
- Maintain adequate inventory levels.
- Complete special projects and other duties as assigned.
- Maintain timely and consistent attendance.
- Uphold the 7 guiding principles of the company.
- Support goals and vision of the Management team.
- Follow all established departmental and facility policies and procedures, including dress code.
- Consistently present a professional personal image and comply with the company’s uniform policy.
- Maintain a safe, clean, and well‑organized working environment.
- Comply with all regulatory rules and regulations, including HACCP, OSHA, Department of Labor, Weights and Measures, and local food and sanitation laws.
- Complete tasks in a timely and efficient manner.
- Ensure logs and proper food handling procedures are met to maintain food safety standards.
- Work a flexible schedule, including holidays and weekends.
Skills and Abilities
Required
- 2-3 years of prior meat cutter/grind experience preferred.
- 3-5 years of management experience preferred.
- Strong interpersonal and verbal communication skills.
- Ability to multitask and use organizational skills.
