Working as a Sous Chef at The Citadel in Charleston, SC, you will contribute to the successful operation of the Culinary Department. You will assist in the supervision, preparation, and cooking of various food items, develop daily menu items and their preparation and garnishment, supervise hourly associates, and work with the Executive Chef to develop new menus and assist with ordering.

• Assist the Executive Chef with managing cost controls and controlling expenditures for the account.
• Assist the Executive Chef with planning and creating menus.
• Produce and execute catering events.
• Roll out new culinary programs in conjunction with Company marketing and culinary team.

• A.S. or equivalent experience.
• Progressive culinary/kitchen management experience, depending on formal degree or training.
• Catering experience a plus.
• High‑volume, complex food service operations experience – highly desirable.
• Institutional and batch cooking experience helpful.
• Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation.
• Computer proficiency including Microsoft Office (Word, Excel, PowerPoint), Outlook, e‑mail, and the internet.
• Willingness to participate in client satisfaction programs/activities.
• Serv Safe certified – highly desirable.
