- Controls and analyzes on an ongoing basis: sales, costs, beverage issuing, quality/presentation of food and beverage products, service standards, facility conditions, equipment, entertainment quality, guest satisfaction, and marketing.
- Develops and maintains an up-to-date operations manual for the Bar section.
- Conducts daily briefings and meetings as needed; participates in service as required.
- Handles administrative work and maintains updated files on bar matters (finance, standards, training, entertainment, outlets, meetings, miscellaneous).
- Assists the General Manager in setting bar goals and developing strategies, procedures and policies.
- Determines minimum and maximum stocks and controls par-stocks of materials, equipment, food and beverages; liaises with Purchasing Manager and suppliers.
- Conducts inventories in coordination with accounting; coordinates with Engineering for preventive maintenance and repairs.
- Monitors local competitors and industry trends; stays informed about F&B systems and equipment.
- Ensures safe, secure and healthy workplace practices and compliance with health and safety requirements.
- Performs other duties, tasks and special projects as assigned.
- Reports to the General Manager.
- Provides direction to Bar employees and collaborates with other department heads.
- Interacts with clients, suppliers and community contacts as part of hotel operations.
