Shift: Shift 4 – 8 hr (4:00 AM – 2:30 PM)

This role performs culinary duties as assigned for food/entree production across the organization. The cook ensures food services sanitation and quality control standards are met and exemplifies Rush’s mission, vision, and values while acting in accordance with Rush policies and procedures.

• High School Diploma preferred.
• Three years cooking experience.
• Two years general cooking experience in cold food preparation and/or as a cook’s assistant.
• Illinois Department of Public Health and City of Chicago Sanitation Certification required within six months of hire and must be maintained thereafter.
• Ability to read, write and speak English.
• Basic math skills for recipe ingredient and quantity adjustments, weight, and measurements.
• Organizational skills.
• Knowledgeable in operating hot preparation equipment such as ovens, steamers, broilers, grills, etc.
• Skill in using culinary hand tools (e.g., knives) and small food processing equipment.
• Problem‑solving ability.

• Associate’s Degree in Culinary Arts.
• Certificate of Completion in Culinary Arts.

• Ability to exert 25 pounds of effort to push or pull a cart, lift and carry 50 pounds minimum, stoop, kneel, reach, and operate kitchen utensils.
• Proficient in using audio‑technology for communication and able to see clearly.
• Ability to transport hot/cold items for service and production using recognized safety equipment in a safe manner.
• 100% of time standing or walking.

• Prepare menu entrees and other items per production schedule using sophisticated equipment for hot preparation.
• May prepare food for different areas of the hospital such as menu entrees, patient service, retail sales, and catered functions as specified by system recipe; follows procedures in accordance with established standards and methods.
• Verify recipe accuracy and assist management in maintaining accurate recipes.
• Act as support staff to entrée cook as assigned.
• Participate in the recipe standardization process.
• Check refrigerators, freezers, and dry storage areas daily for utilization of leftovers and proper rotation of products.
• Adhere to time schedules for production and service.
• Assist with inventory control as assigned by Manager.
• Wrap, label, date, and store products correctly.
• Serve and store food at correct temperatures; maintain temperatures of items served and stored.
• Maintain cleanliness and sanitation of work area and equipment; perform cleaning duties as assigned.
• Comply with all regulatory agency standards and all departmental policies and procedures.
• Train new personnel as assigned.
• Orient dietetic interns to work area as assigned.
• Perform related duties as assigned.
