Position Summary
The Dietary Manager is responsible for planning, organizing, directing, and supervising the dietary department to ensure high-quality nutritional care for residents in accordance with federal, state (Ohio Department of Health), and local regulations. This role ensures that meals are nutritious, appetizing, prepared safely, and served in a manner that enhances the overall dining experience and supports resident health and satisfaction.
Essential Duties and Responsibilities Department Leadership & Compliance- Oversee daily operations of the dietary department.
- Ensure compliance with Ohio Department of Health regulations, CMS guidelines, and facility policies.
- Maintain sanitation standards in accordance with local health department requirements.
- Develop, implement, and monitor departmental policies and procedures.
- Participate in state surveys and respond to any dietary-related findings.
- Plan and approve menus in collaboration with a Registered Dietitian, ensuring they meet residents’ nutritional needs and physician-ordered diets.
- Ensure proper preparation and service of therapeutic and modified diets.
- Monitor food quality, portion control, and presentation.
- Accommodate special dietary needs, preferences, and cultural considerations.
- Oversee meal service to ensure a positive dining experience.
- Hire, train, supervise, and evaluate dietary staff.
- Prepare work schedules and ensure adequate staffing.
- Provide ongoing training related to food safety, sanitation, and dietary procedures.
- Promote teamwork and high standards of customer service.
- Manage department budget and control food and supply costs.
- Order food, supplies, and equipment; maintain appropriate inventory levels.
- Ensure proper storage and labeling of food and supplies.
- Minimize waste through effective inventory management practices.
- Ensure adherence to food safety guidelines, including proper food handling, storage, and temperature monitoring.
- Maintain a clean and safe kitchen environment.
- Ensure compliance with infection control standards.
- High school diploma or equivalent required.
- Certification as a Dietary Manager (CDM) preferred; must meet Ohio requirements for Dietary Manager in a long-term care facility.
- Serv Safe Certification (or ability to obtain within required timeframe).
- Previous experience in food service management, preferably in long-term care or healthcare.
- Knowledge of therapeutic diets and nutrition standards.
- Strong leadership, organizational, and communication skills.
- Ability to stand, walk, bend, and lift up to 50 pounds.
- Ability to work in a kitchen environment with exposure to heat, cold, and cleaning chemicals.
