RESPONSIBILITIES AND MAJOR DUTIES:

1. Perform simple arithmetic and units of measurement conversions used in food preparation.

2. Supplies planned diets and menus for review by the Dietitian and follows recommendations accordingly.

3. Implement diets and menus approved by the Dietitian

4. Purchase or requisition food and supplies.

5. Supervise the receiving, storage, preparation and serving of food to all parties within the facility.

6. Assumes responsibility to maintain an enhanced dining experience for all residents within assigned facility(s).

7. Assume responsibility for compliance with serving palatable and flavorful food at the appropriate temperatures per established guidelines.

8. In conjunction with Dietitian, interview residents and determine specific dietary needs and preferences.

9. Maintain records of residents’ profiles, meal census, menus, diet cardex, diet roster, diets served and purchase records.

10. Manage and participate in employee selection, evaluation and termination.

11. Ensure all communication of pertinent information to dietary employees is completed in an organized and timely fashion.

12. Plan and conduct in-service training programs as needed.

13. Implement and adhere to dietary policies and procedures

14. Maintain food, supply and labor costs within the dietary budget.

15. Assume responsibility for compliance with all sanitation, food safety and infection control requirements for the facility.

16. Observe infection control procedures.

17. Follow Residents’ Rights policies at all times.

18. Adhere to all facility policies & procedures and ensure they are adhered to by all responsible parties and carry out disciplinary action for non-compliance as appropriate.

19. Ensure adherence to the Corporate Integrity Program and the Performance Expectations at all times.

20. Perform other related duties as directed by the Administrator and/or person of authority.
