Mixing Supervisor

The Mixing Supervisor leads daily mixing and dough preparation operations in a high-volume environment. This position ensures each dough is mixed and fermented to specification while maintaining the quality, consistency, and craftsmanship expected of artisan sourdough.

The ideal candidate has strong working knowledge of dough development, sourdough fermentation, ingredient functionality, temperature control, and commercial bakery equipment. In this role you must be comfortable making real-time adjustments based on dough condition, flour performance, production schedules, and environmental factors.

Key Responsibilities

  • Manage all mixing, dough preparation, preferment, and long-fermentation processes during the assigned shift.
  • Ensure formulas, mixing sequences, ingredient weights, dough temperatures, mixing times, and fermentation requirements are followed.
  • Evaluate dough development using temperature, texture, elasticity, extensibility, hydration, and fermentation activity.
  • Make timely process adjustments to maintain dough quality and production flow.
  • Coordinate dough readiness with dividing, makeup, proofing, baking, and production teams.
  • Monitor fermentation timelines to prevent under- or over-fermentation.
  • Verify the accurate scaling and addition of ingredients, including minor ingredients and allergens.
  • Ensure mixers, tanks, ingredient-delivery systems, and supporting equipment are operating properly.

Team Leadership

  • Lead, train, and develop mixers, ingredient handlers, and other assigned employees.
  • Assign work and communicate production priorities, formula changes, and shift expectations.
  • Monitor employee performance, attendance, productivity, and compliance with company policies.
  • Provide real-time coaching and hold employees accountable for quality, safety, and performance expectations.
  • Support cross-training and skill development to strengthen shift coverage and team capability.
  • Promote a respectful, fast-paced, team-oriented work environment.

Safety & Food Safety

  • Ensure compliance with OSHA, GMP, HACCP, SQF, and all food safety requirements.
  • Verify all Standard Operating Procedures are consistently followed.
  • Immediately address unsafe conditions and food safety concerns.
  • Participate in investigations and corrective actions related to quality or safety incidents.
  • Production Performance
  • Monitor adherence to the production schedule and ensure dough is available when needed.
  • Track batch accuracy, dough temperature, fermentation timing, yield, waste, rework, and labor performance.
  • Identify operational issues that could affect throughput, product quality, or downstream production.
  • Communicate equipment, ingredients, staffing, and scheduling concerns to the Shift Operations Manager.
  • Support process improvements that increase consistency, efficiency, capacity, and employee safety.
  • Complete accurate shift reports and provide a clear transition to the incoming supervisor.

Requirements

  • High School Diploma or GED required.
  • Minimum of three years of mixing in a commercial bakery or industrial dough-processing experience. Experience in an artisan bread, sourdough, or long-fermentation commercial bakery highly preferred.
  • Minimum of two years of supervisory or team-leadership experience in a commercial bakery environment (manufacturing not retail).
  • Practical knowledge of commercial mixing equipment and batch-production processes.
  • Demonstrated understanding of dough development, fermentation, hydration, dough temperature, and ingredient functionality.
  • Experience leading teams in a fast-paced, high-volume production environment.
  • Working knowledge of GMPs, food safety, allergen controls, sanitation, and production documentation.
