What You’ll Do

  • Prepare sushi rolls, nigiri, sashimi, and specialty dishes according to company recipes and presentation standards.
  • Use knives and other kitchen equipment safely and skillfully to portion and prepare ingredients.
  • Maintain consistency in flavor, quality, portioning, freshness, and presentation.
  • Inspect ingredients before use and promptly report quality or food-safety concerns.
  • Properly store, label, date, and rotate ingredients following FIFO procedures.

  • Provide welcoming and knowledgeable service to guests seated at or interacting with the sushi bar.
  • Answer guest questions regarding menu items and communicate allergy or dietary requests appropriately.
  • Collaborate with kitchen and front-of-house teams to maintain smooth service and accurate order execution.
  • Monitor inventory, restock supplies, and assist with prep work and opening or closing responsibilities.
  • Minimize food waste by following recipes, portion standards, and proper storage procedures.
  • Support the training and development of new sushi employees as assigned.
  • Uphold Trapper’s Sushi’s TRAPCHK core values:

  • 401(k) with company match after one year of service.
  • Voluntary dental and vision coverage.
  • Employee Assistance Program (EAP).

  • Leadership development and advancement opportunities.
  • Opportunities to grow within an expanding restaurant organization.
  • A pathway to become a Managing Partner and pursue restaurant ownership through our ownership program.
  • A supportive, collaborative, and team-oriented workplace where your contributions matter.
