We are seeking a passionate and experienced Senior Food & Beverage Manager to lead the dynamic food and beverage operations at The Dragonfly, located within the Michelin Key-awarded Hotel ZaZa Dallas Uptown. As the Senior Food & Beverage Manager
, you will oversee the daily operations of The Dragonfly, poolside service and in-room dining
, ensuring seamless service delivery, operational efficiency, and alignment with brand standards. You will lead a team of dedicated professionals, fostering a culture of innovation, accountability, and elevated guest experiences. Your leadership will be instrumental in maintaining our reputation for culinary distinction and personalized service.
- Lead, train, and inspire front-of-house staff in line with Hotel ZaZa’s service standards.
- Ensure smooth execution of all service—restaurant, pool, in-room dining—while maintaining quality, efficiency, and an exceptional guest experience.
- Manage inventory, ordering, and vendor relationships to ensure all F&B outlets are stocked and operational.
- Collaborate closely with culinary, events, and hotel departments to ensure cohesive service delivery.
- Maintain strong cost controls and participate in forecasting, scheduling, payroll, and budgeting.
- Oversee compliance with TABC laws and company policies, ensuring a safe and responsible environment.
- Ensure the ambiance, cleanliness, and presentation of all service areas match ZaZa’s high standards.
- Handle:
- Weekly scheduling, staffing, and payroll forecasting
- Beverage and food cost tracking & requisitioning
- End-of-month inventory and reporting
- POS system management (front and back of house)
- Hands-on with POS systems, kitchen equipment, inventory software
- Work across indoor/outdoor spaces including restaurant, pool area, kitchen, and guest rooms
- Must be able to lift up to 25 lbs
- Must be comfortable working long hours, including evenings, weekends/holidays
- 3-5 years of progressive hospitality leadership experience, preferably in boutique, lifestyle, or luxury properties.
- Strong background in Food & Beverage operations required.
- Proven ability to lead diverse teams, handle high guest volumes, and maintain composure under pressure.
- Excellent communicator with strong organizational and problem solving skills
- Working knowledge of TABC compliance, inventory systems, and POS
