Role DescriptionThe Sushi Chef at Namo is a full-time, on-site role based in Dallas, TX. The Sushi Chef prepares and assembles sushi and sashimi, manages seafood selection and cutting, and ensures all dishes meet Namo’s standards for taste, presentation, and portioning. Daily responsibilities include maintaining a clean and organized workstation, following strict hygiene and food safety procedures, and coordinating timing and ticket flow with the kitchen and front-of-house teams.
The Sushi Chef also assists with menu item preparation, ingredient ordering support, and inventory checks, and may help train team members on sushi techniques and safety practices.
- Strong food preparation skills, including knife handling and ingredient organization.
- Proficiency in cooking and core culinary skills relevant to Japanese cuisine.
- In-depth knowledge of seafood handling, selection, and storage for sushi and sashimi.
- Commitment to hygiene, cleanliness, and strict food safety standards.
- Previous experience as a Sushi Chef or in a professional kitchen environment.
- Ability to work in a fast-paced setting, manage multiple orders, and maintain consistency.
- Effective communication skills and a collaborative approach with kitchen and front-of-house teams.
- Flexibility to work evenings, weekends, and holidays as required by restaurant operations.
