Ensures that all dinnerware, glassware, flatware and service-ware is 100% soil-free and sanitized. Keeps sanitized dinnerware stocked and ready for use in the appropriate locations in the store.

• Places dirty dishes, glassware and silverware on racks to be washed.
• Initiates spray hose and scrubbers in sink to wash away large particles and food items from dishes, plates, bowls, pots, and pans.
• Places racks of dirty glasses, plates, bowls, and silverware into the dish tank machine and operates the washing machine.
• Maintains proper wash and rinse temperatures.
• Ensures that a proper dilution level of sanitizing solutions is adequate for all wash loads.
• Removes clean plates, pots/pans, and utensils from racks, and places them in the appropriate locations for reuse, inspecting all items for cleanliness.
• Re-stacks racks of glassware in server alleys where appropriate.
• Organizes and stocks clean small wares wherever appropriate.
• Breaks down and reassembles the dish machine as needed.
• Refills soap solution in machine as needed.
• Empties trash as needed.
• Maintains a sanitary workstation using a "clean as you go" attitude, including mopping surrounding floor areas.
• Assesses level of sanitation or mechanical problems.
• Maintains a clean and safe work environment.
• Utilizes all procedures with regard to sanitation and hygiene.
• Maintains standards to ensure profitability without sacrificing quality control practices.
• Exercises teamwork with other staff.
• Abides by restaurant's standards, policies and procedures and safety rules at all times.
• Reports to work on time, well groomed and properly attired.
• Conducts oneself in a professional and respectful manner towards guests, fellow employees and management at all times.
• Maintains confidentiality of all trade secrets, keeping all recipes, policies, and procedures confidential.
