Job Overview

We are seeking a passionate and experienced Executive Chef specializing in authentic Italian cuisine to lead the culinary team at our upscale Italian restaurant. The ideal candidate will bring a deep knowledge of regional Italian cooking techniques, fresh seasonal ingredients, and traditional recipes while infusing creativity to elevate the dining experience. As the leader of the kitchen, you will oversee all culinary operations, inspire your team, and ensure every dish reflects the highest standards of quality, flavor, and presentation.

Key Responsibilities
  • Design and develop innovative yet authentic Italian menus, incorporating classic dishes (e.g., handmade pastas, risottos, osso buco) alongside seasonal specials and modern interpretations.
  • Oversee daily kitchen operations, including food preparation, cooking, plating, and expediting during service.
  • Manage inventory, sourcing high-quality ingredients from trusted suppliers, with an emphasis on imported Italian products and local seasonal produce.
  • Lead, train, mentor, and schedule a team of sous chefs, line cooks, and kitchen staff to maintain consistency and excellence.
  • Ensure strict adherence to food safety, sanitation, and hygiene standards in compliance with health regulations.
  • Control food costs, portion sizes, and waste to achieve budget goals while maintaining superior quality.
  • Collaborate with front-of-house management on menu pairings, wine lists, and special events.
  • Stay current with Italian culinary trends, regional variations, and sustainable practices.
Qualifications
  • Minimum 5+ years of professional kitchen experience, with at least 4 years as an Executive Chef or Chef de Cuisine in an Italian or fine-dining restaurant.
  • Proven expertise in authentic Italian cuisine, including regional specialties (e.g., Tuscan, Sicilian, Northern Italian).
  • Culinary degree or equivalent certification from a reputable institution (e.g., Italian culinary academy preferred).
  • Strong leadership skills with experience managing teams in high-volume environments.
  • Excellent knowledge of food costing, inventory management, and P&L responsibility.
  • Ability to work flexible hours, including evenings, weekends, and holidays.
  • Passion for Italian food culture, wine pairings, and guest satisfaction.
  • Certification in food safety.
