Key Responsibilities:

• Direct, coach, support, supervise, and evaluate all direct reports in collaboration with the Sous Chef.
• Have excellent food knowledge and a full understanding of culinary terms.
• Read, understand, follow, and prepare company recipes to maintain quality and consistency as instructed by the corporate office.
• Work efficiently and complete tasks proficiently.
• Be able to work in any kitchen section.
• Coordinate and supervise team members, assign and delegate tasks accordingly.
• Review recipes daily and maintain recipe folders meticulously.
• Follow through on requests from supervisors, including show plates, food samples, and tastings.
• Control production levels, suggest improvements, and manage costs.
• Prepare daily electronic food requisitions and verify deliveries, reporting discrepancies.
• Oversee any main kitchen section and its food production.
• Ensure compliance with Public Health standards (US, Anvisa, Shipsan, Canadian, Australian, etc.) within their section.
• Carry out the HACCP program correctly.
• Prepare for health inspections and maintain cleanliness and standards.
• Report for duty on time, follow instructions, and maintain personal appearance and hygiene according to company rules.

Qualifications and Skills

• At least 8 years in upscale hospitality, with 2+ years as Chef de Partie (shipboard experience preferred).
• Culinary school degree required.
• Strong management skills in a multicultural environment.
• Excellent communication, problem-solving, decision-making, and interpersonal skills.
• Superior customer service and team-building skills.
• Knowledge of personalized service principles and guest satisfaction techniques.
• Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.
• Intermediate computer skills.
• Understanding of basic accounting principles.
• Ability to write reports and establish rapport with ship’s officers and corporate office.
