Restaurant Manager

The Restaurant Manager is a key leadership role within Mount Edgecombe Country Club, responsible for the strategic, operational, and financial performance of The Outlook Restaurant and The Bar.

This position requires a highly accountable, hands‑on leader who will drive service excellence, revenue growth, cost control, compliance, and people development, while upholding the Club’s reputation for quality, professionalism, and member satisfaction. The Restaurant Manager is expected to always act in a manner that positively represents Mount Edgecombe Country Club, demonstrating professionalism, integrity, and leadership in all interactions. The role carries full responsibility for staff leadership, operational execution, financial discipline, guest experience, and alignment with the Club’s strategic objectives.

• Provide visible leadership across The Outlook Restaurant and The Bar
• Ensure alignment of operations with the Club’s vision, values, and service standards
• Implement and maintain standard operating procedures across all service areas
• Drive continuous improvement in service delivery, efficiency, and guest satisfaction
• Take full accountability for daily opening, trading, and closing procedures
• Take ownership of revenue performance, cost control, and profitability
• Drive sales initiatives, upselling strategies, and service efficiencies
• Control food, beverage, labour, and operating costs in line with approved budgets
• Ensure accurate daily cash‑ups, financial reporting, and variance tracking
• Oversee stock control processes and ensure accurate submission of all documentation
• Investigate, report, and resolve stock shortages and variances
• Ensure all Acknowledgement of Debt documentation is completed, signed, and submitted time‑wise

• Champion a culture of service excellence across all teams
• Personally manage and resolve guest complaints with professionalism and discretion
• Ensure consistent food and beverage quality and presentation
• Build strong relationships with members and guests to encourage repeat business
• Always maintain the premium image of Mount Edgecombe Country Club

• Enforce food safety, hygiene, and sanitation standards without exception
• Ensure compliance with all company policies, operational procedures, and legal requirements
• Maintain impeccable standards of cleanliness, uniform compliance, and presentation
• Monitor portion control, preparation standards, and waste reduction initiatives

• Lead, mentor, and develop all staff within The Outlook Restaurant and The Bar
• Establish clear performance expectations and conduct regular performance reviews
• Address performance issues decisively and in line with company procedures
• Plan and manage staffing requirements and approve duty rosters
• Ensure accurate timekeeping, sign‑in/sign‑out procedures, and compliance with working hours
• Ensure staff are cashed up promptly and efficiently
• Foster a professional, disciplined, and motivated team environment

• Ensure security procedures are implemented to protect staff, guests, and Club assets
• Maintain a safe working environment and ensure all incidents are reported promptly
• Reduce operational risks through initiative‑taking management and compliance monitoring

• Report structure to be confirmed
• Keep Senior Management and the CEO fully informed of operational risks, performance challenges, and key achievements
• Provide accurate, timely operational and financial reports as required
• Take immediate corrective action where issues arise and propose practical solutions
