Description of Work
Reporting to the Correctional Food Service Manager, this position is located in the Food Service department at a multi-custody male correctional facility. Responsibilities of this position include, but are not limited to, the following:
Providing supervision for Correctional Food Service Officers.
Providing oversight of offenders performing large-scale food activities.
Supervising the preparation and service of regular and therapeutic diets for the offender population.
Planning, directing, and supervising the daily preparation and serving of food to offenders.
Daily work includes food preparation, serving, storage, menu planning, menu substitutions, and maintaining sanitation requirements.
Performing required recordkeeping.
Using computerized food and nutrition systems to prepare and serve daily meals.
Conducting employee work appraisals.

/Management Preferences
Candidates now meet the minimum qualifications of a position if they meet the Minimum Education and Experience listed on the vacancy announcement. The Knowledge, Skills, and Abilities (KSAs)/Management Preferences are not required but applicants who possess the following skills are preferred:
Documented experience in sanitation, preparing menus, managing inventory, and/or other large-scale food service production activities.
Documented supervision of employees and/or offender workers.

Salary Range : $43,267 - $75,718

This is a full-time position (40 hours per week). The selected candidate may be selected to work any shift and will work weekends and holidays to ensure 24/7 staff coverage.
About Central Prison
Central Prison in Raleigh, NC has been in continuous service since 1884. It serves as the admission point into prison for adult male felons sentenced to 20 years or more and is the main medical and mental health center for male offenders. It also houses special populations, including death row and safe-keepers.
While security requires that certain offenders remain in their cells, there are more than 260 offender job assignments that include working in the kitchen, laundry, or canteen. Offenders also work as barbers, janitors, and clerks. Offenders can attend substance abuse group therapy meetings, Bible studies or other worship services.
