Banquet Captain

The purpose of the Banquet Captain is to set, maintain, clean, and refresh all meeting/special event spaces within the venue. The Assistant Manager will oversee the setup/operations team. In addition, this position will also be responsible for organizing all storage areas and maintaining end-of-month inventory reports for banquet, concessions and bar equipment and supplies.

Responsibilities The purpose of the Banquet Captain position is to oversee the daily operations of the Food & Beverage operations team within the convention center, Plaza Theatre,

A. Chavez Theatre, McKelligon Canyon Amphitheatre, DEP Administration Building, Arts Festival Plaza and Outside Catering ensuring smooth and efficient service for meetings, conventions, and special events. The Banquet Captain will supervise staff during setup, service, and breakdown while maintaining high standards of guest service, safety, and operational excellence.

Key Responsibilities:
  • Supervise and direct the [bartending | catering | concessions] staff during all event phases, ensuring accurate execution of event requirements.
  • Oversee setup, service, and closing procedures for assigned areas, maintaining cleanliness, organization, and compliance with venue standards.
  • Train, support, and motivate team members to deliver consistent, high-quality service.
  • Organize and maintain storage areas, ensuring products, equipment, and supplies are properly rotated, secured, and inventoried.
  • Complete and submit end-of-month inventory reports for [liquor, beer, wine, and bar supplies | catering equipment, service ware, and food supplies | concession food, beverage, and equipment].
  • Ensure compliance with all health, safety, and responsible service regulations.
  • Communicate with management, culinary, and operations teams to ensure seamless event execution.
  • Address guest needs and resolve service issues in a professional and timely manner.
Event Operations & Setup Responsibilities:
  • Set up meeting rooms, function areas, and event spaces with appropriate equipment and materials (tables, chairs, linens, staging, bars, concession stations, etc.) according to floor plans and management standards.
  • Pay close attention to detail when setting spaces to ensure accuracy and quality presentation.
  • Possess knowledge of banquet configurations, catering setups, bar layouts, and concession stand requirements.
  • Tear down and reset event spaces per specifications outlined on Banquet Event Orders (BEOs) or event plans.
  • Clean and refresh meeting and event spaces as needed, including replacing soiled linens, replenishing beverages, restocking concessions, and resetting furniture.
  • Continuously keep service corridors, pre-function space, and storage areas clean, organized, and unobstructed.
Operational Support & Team Responsibilities:
  • Act as a liaison with operations and event services teams to ensure smooth transitions between events.
  • Participate as a back-of-house team member during special events, including assisting with food and beverage delivery, water/coffee service, ice drops, and concession support as needed.
  • Assist during special event operations by supporting wait staff, bartenders, or concession workers to deliver the highest level of customer satisfaction.
  • Attend and participate in weekly conversion meetings, BEO reviews, and pre-conference planning meetings as assigned.
  • Supervise, train, and motivate operations staff to uphold service excellence and efficiency.
  • Maintain a clean and organized work area at all times.
Event Scheduling & Conditions:
  • Must be available to work a flexible schedule, including nights, weekends, holidays, and special events as assigned.
  • Duties are performed in both indoor and outdoor settings, often in varying weather conditions and noise levels.
Qualifications:
  • Minimum of (5) years of banquets set up experience in large/high volume venue.
  • High School Diploma or GED.
  • Ability to lift 50lbs, as well as bend, stretch, push and pull objects with support equipment.
  • Able to work non-traditional shifts to include extended hours and flexible schedule including early mornings, weekends, days, nights and holidays.
  • Ability to stand/walk throughout shift.
  • Must be able to work well in high pressure situations and remain flexible during last minute additions or changes.
  • Must possess good communication skills both verbal and written.
  • Familiar with Microsoft Outlook, Word and Excel with ability to learn applicable data bases and systems.
