Meat Inspector Trainee – District 7 (2600046Q)
Assist meat inspectors in performing ante‑mortem and post‑mortem inspections, enforcement of state and federal sanitation policies, inspection of equipment and facilities, labeling verification, and sampling procedures. The position is located in Madison County, Ohio.
Responsibilities- Receive training and mentoring from senior inspectors and assist in inspections of registered meat plants, private, commercial slaughtering plants, and custom‑exempt facilities.
- Perform ante‑mortem and post‑mortem inspections of carcasses, enforce sanitation, humane slaughter, and food‑safety policies.
- Conduct visual examinations of live animals or poultry before slaughter for abnormalities.
- Contact veterinarians for disposition of unhealthy animals and record results.
- Determine age of beef using dentition of cattle 30 months or older for BSE concerns.
- Inspect head, lymph nodes, viscera, carcass, and offal to identify pathological conditions.
- Inspect equipment, facilities, and personnel to ensure sanitation levels are met; halt production if non‑compliance occurs.
- Ensure proper disposition of unfit and condemned products, enforce sanitary dressing procedures, and control carcass branding.
- Assist with labeling requirements, review proposed labels, formulations, production procedures, and quality‑control records.
- Check formulations of meat products for federal compliance and monitor inspection procedures.
- Assist with sampling procedures and submit product samples for microbiological analysis.
- Require plants to conduct microbial testing for generic
E.coli to verify process controls. - Document verification results in the Public Health Information System (PHIS).
- Assist senior inspectors with other meat‑inspection duties as assigned.
- Perform re‑inspection of meat or poultry products and non‑meat ingredients intended for further processing or distribution; inspect critical control points in formulation, temperature control, and preparation.
- Prepare, maintain, and monitor records, reports, and formulations concerning product condemnations and retentions; control sanitation discrepancies and corrective actions.
- Assist in industry quality‑control programs, analyze deviations, travel, and pay reports, and submit through proper channels.
- Attend training courses (e.g., Incidence Command Systems, Inspection System Procedures, homeland security) and refresher seminars.
- One course in animal science, agribusiness, or food business management.
- Or 3 months experience in livestock industry/industrial meat and poultry processing.
- One course in biological sciences or chemistry (high school or college).
- Must be able to provide personal transportation.
- Equivalent of the minimum class qualifications noted above.
- Competitive salary: $23.65 per hour.

Work flexible hours and/or shifts; travel required with some overnight stays; must have valid driver’s license and own transportation. Work weekends; rotations on 2nd shift every 6 months. May be exposed to extreme temperatures, slippery surfaces, rodents, chemicals, and machinery. Must stand for extended periods in confined areas and work around animals and machinery that may pose injury risks.
