Meat Inspector Trainee – District 8 (260004GJ)
Location:
Clark County, Ohio (United States of America). This is a full‑time position with rotating shifts and a compensation range of $23.65 per hour, with an annual salary of $49,192 – $59,821. The position is unioned under OCSEA.
- Receives training and mentoring from a higher‑level meat inspector to learn procedures and assists in conducting inspections of registered meat plants, private and commercial slaughtering plants, and custom‑exempt red meat and/or poultry processing facilities.
- Learns to perform ante‑mortem and post‑mortem inspections of carcasses and enforces state and federal sanitation, humane slaughter, meat processing, and food safety policies, procedures, and guidelines.
- Conducts visual examination of live animals and/or poultry prior to slaughter, looking for abnormalities in appearance and behavior such as sickness, injury, or non‑ambulatory condition.
- Contacts veterinarian for final disposition of unhealthy animals and records results.
- Determines the age of beef by dentition of cattle 30 months or older for BSE concerns and removes backbone as required.
- Performs visual, tactile, and/or incisory inspection of head, lymph nodes, viscera, carcass, and offal to detect pathological conditions and ensure the carcass is clean and wholesome.
- Inspects all equipment, facilities, and personnel to ensure acceptable sanitation levels, prohibiting use of unsanitary, unsafe, and/or unapproved equipment and facilities until cleaned or corrected, including pest and rodent control, pesticide use, potable water quality, and waste and sewage systems.
- Halts production for poor sanitation or non‑compliance and ensures proper disposition of unfit and condemned products, enforces sanitary dressing procedures, and controls carcass branding.
- Assists with labeling requirements, reviews labeling materials, and checks formulations of all types of meat food products for compliance with federal regulations.
- Learn sampling procedures and assists higher‑level inspector with submission of product samples for microbiological analysis, ensuring compliance with generic
E.coli testing requirements. - Documents verification results and navigates the Public Health Information System (PHIS).
- Assists higher‑level inspector with other meat inspection duties as assigned.
- Performs re‑inspection of meat and/or poultry products and non‑meat ingredients intended for further processing or distribution, and inspects critical control points in preparation and handling of meat or poultry products, monitoring formulation, temperature controls, preparation procedures, use of restricted ingredients, and sampling.
- Prepares, maintains, and monitors required records, reports, and formulations concerning product condemnations and retentions, controlling all sanitation discrepancies and corrective actions.
- Assists in industry quality control programs and analyzes report deviations, travel, and pay reports.
- Attends training courses, refresher seminars, and on‑job training activities.
- One course in animal science, agribusiness, or food business management, OR three months of experience in the livestock industry/industrial meat and poultry processing.
- One course in biological sciences or chemistry (high school or college level).
- Must be able to provide own transportation.
