Meat Cutter responsibilities include learning and understanding company policies and safety standards; proper receiving, handling and storing of meat; temperature controls; understanding price book and ad planner bulletins; know wrapping and weighing standards; familiar with product identification PLU/UPC; be skilled with safe use of all equipment; understand freshness/code dating; know dated product pull policies; cut, trim, tray, and present fresh meats;

comply with Greer's set standards (cutting lists and importance); familiar with ground beef program, grinding, holding procedures and handling of fresh trim including boning standards; lean to fat ratio; merchandising for profit; filling and rotating all meat cases; customer service and company requirements; know quality and grade of all products; space allocation and location; proper cleaning and sanitizing; proper signing of products;

know product usage (best cooking method for each cut, correct labels); learn merchandising/cross merchandising; understand meat variety; learn supermarket math.
