Overview
Under limited supervision performs work of moderate difficulty in preparing and serving meals to inmates; supervising trustees in food preparation and serving; performs related work as assigned.
The ideal candidate will have experience cooking in high-volume or institutional settings (correctional, school, hospital, military, shelter) and be comfortable working in a secure, highly regulated environment.
This position requires shift work and weekend work.

Responsibilities- Plans, purchases, prepares and serves inmate meals
- Trains, supervises 10 to 12 working inmates in food preparation, safety and policies and procedures for a population of approximately 400 to 600 inmates while maintaining security in the kitchen, without an officer present
- Inspects and ensures the quality and quantity of food
- Supervises and assists in cleaning kitchen and serving areas
- Prepares reports and maintains records and inventories as required
- Maintains compliance with food handling policies and procedures
- Maintains a positive work environment with and amongst the working inmates
- Keeps food costs within the parameters of the budget
- Consults with dieticians, nutritionists, and medical staff for special diets
Essential functions of this position include but are not limited to: standing and walking to prepare and serve food; reaching for items on shelves; working with and around inmates and other staff and volunteers; repetitive motion (hand-wrist and elbow-shoulder) to prepare food and sweeping, mopping; hearing and speech (ordinary conversation) to communicate with staff and inmates and for telephone conversations, overhead paging and conversations in a loud environment;
touch (finger dexterity) for preparing food, phone usage and clean up. Environmental factors include working indoors within the jail and dining hall; working around extreme heat and noise. Hazards including potential for oven and stove top burns.
Two years of experience in food preparation, serving and cooking in volume; OR any combination of education, training and experience which demonstrates the ability to perform the duties of the position.
Additional Requirements- Must submit to a background search and successfully pass polygraph examination.
- Must not have a felony conviction within previous ten years or dishonorable discharge from the military.
- Must not have a misdemeanor conviction involving domestic violence within previous five years.
- Must not have used dangerous or narcotic drugs in the past five years for more than experimentation.
- Must acquire Food Manager's Certificate within 90 days of hire.
- Previous experience supervising kitchen staff or inmate/detainee work crews
- Prior experience working in a detention, correctional, or secure facility
- Experience preparing meals for large populations (100+ meals per service)
This position is non-exempt from overtime.
