Principal Scientist, Sausage Product Development

About the Role

A well established food manufacturer is hiring a Principal Scientist to lead sausage product development for a growing category. Summer sausage, breakfast sausage, crumbles, this role owns it all. You'll drive formulation from concept through commercialization, partner with ingredient and casing suppliers, and work hand in hand with plant and QA teams to bring new products to life. This is a hands on, build it yourself kind of opportunity, ideal for someone who wants to shape a program rather than maintain one.

• Lead formulation and product development for sausage category innovation from early concept through launch
• Navigate the stage gate process and manage timelines across multiple concurrent projects
• Partner closely with ingredient and casing suppliers to source and develop new formulations
• Collaborate with plant operations and QA teams to troubleshoot and scale new products
• Bring an entrepreneurial mindset to building processes and programs from the ground up

• 10 to 15 years of experience in sausage product development, or 8+ years with a Master s degree
• Deep, specific expertise in sausage formulation, not general food science or meat science exposure
• Background from a major protein company, or from an ingredient or casing supplier with a sausage focused portfolio
• Comfort working independently as an individual contributor in a fast moving, entrepreneurial environment
• Willingness to travel as needed to support projects across multiple facilities
