ROLESUMMARY:
The Hotel Kitchen Lead orchestrates daily Food and Beverage back-of-house operations. This role drives culinary consistency, enforces food safety compliance, and manages shift execution for a la carte dining in the Placery and Event banquets. Responsibilities include inventory control, staff training, and delivering five-star guest satisfaction. The Kitchen Lead is also responsible for creating a welcoming, friendly, and efficient breakfast experience for guests at Hyatt Place Fort Worth Historic Stockyards.
As leading the kitchen team as the first point of contact in the morning, this leadership role sets the tone for the team and the day by greeting guests warmly, managing seating flow, and supporting smooth breakfast operations while delivering genuine hospitality rooted in Hyatt Place service standards.
- Lead the culinary line, delegate tasks, and ensure timely food preparation and presentation for hotel buffet, restaurants, and banquet events
- Taste and inspect all dishes to guarantee they meet established hotel recipes, portion sizes, and aesthetic standards.
- Monitor stock levels and inventory, rotate products using the FIFO method, and ordering food and operating supplies, assisting with ordering food supplies to minimize spoilage.
- Enforce Serv Safe and HACCP guidelines, maintain clean workstations, and conduct daily temperature and health code checks.
- Train line cooks and prep staff on food safety regulations, culinary techniques, and hotel hospitality standards.

Collaboration:
Work closely with the Front-of-House (FOH) and catering teams to ensure seamless service and accommodate guest dietary restrictions or requests - Greet guests promptly and warmly upon arrival to the breakfast area, creating a friendly and welcoming start to each guest’s day.
- Monitor guest traffic and manage breakfast flow to ensure seating availability, smooth circulation, and positive guest experiences.
- Assist guests with breakfast seating, including accommodating accessibility needs, families, groups, or special requests when possible.
- Communicate clearly and professionally with kitchen and hotel team members regarding guest volume, replenishment needs, or service concerns.
- Maintain cleanliness, organization, and presentation of the breakfast area, host stand, and entry points in accordance with Hyatt Place brand standards and health regulations.
- Assist guests with questions regarding breakfast offerings, hours of service, dietary considerations, or hotel amenities.
- Anticipate guest needs and proactively offer assistance to enhance comfort and convenience.
- Address guest concerns or complaints calmly and professionally, escalating issues to leadership as appropriate.
