POSITION SUMMARY
The incumbent is responsible for maintaining the cleanliness of dishes, glassware, flatware, and food preparation areas. This position also greets guests with a welcoming smile to contribute to the guest experience.
ESSENTIAL FUNCTIONS- Assist in the kitchen with dishwashing to ensure an adequate supply of dishes and utensils.
- Complete all set‑up duties on time.
- Maintain the overall cleanliness and appearance of assigned areas and kitchen.
- Load all plates, bowls, and glassware into proper areas.
- Ensure all equipment is in working order and meets Hard Rock safety and cleanliness standards.
- Perform work regularly and predictably, maintaining open communication with the Stewarding Supervisor and Executive Steward.
- Clean and sanitize work and public spaces.
- Break down, load, catch, and properly sort dishes, glassware, and flatware as they are brought to the dish area.
- Wash, sort, and store cleaned pots in the proper locations on shelves, placing large items on the bottom shelf.
- Maintain cleanliness of all food‑service preparation areas, stainless steel, and storage areas.
- Unload clean dishes from the rack, inspect for cleanliness, and place in specified carts, shelves, and kitchens.
- Maintain cleanliness of dish machines, hot/cold boxes, speed racks, carts, and ice machines in all outlets.
- Clean, organize, and stock stewarding storage areas.
- Sweep and mop floors, baseboards, and drains throughout the assigned outlet.
- Wash walls, drains, hand sink, table, and cutting board as needed.
- Remove trash/cardboard and transport to designated containers; clean and sanitize trash containers.
- Maintain cleanliness of the dumpster area and wash bay facility.
- Adhere to all Food & Beverage department rules and policies set by the organization.
- Ensure compliance with all government regulations and sanitation guidelines.
- Demonstrate a commitment to proper behavior that reinforces the company’s code of ethics, integrity, and teamwork.
- Perform other duties as assigned.
- Attend training when needed.
A minimum of one year of progressive experience within the Stewards’ Department.
ADDITIONAL REQUIREMENTS- Must obtain and maintain all mandatory licenses and certifications per Federal, State, and Indiana Gaming Commission.
- Must successfully pass a background check.
- Must successfully pass a drug screening.
- Must be at least twenty-one (21) years of age.
- Must be able to work holidays, weekends, and flexible shifts.
- Pertinent federal, state, and local laws, codes, and regulations.
- All operations of the Stewards’ Department.
- Communicate clearly and concisely, both orally and in writing.
- Work flexible shifts and varying schedules as needed.
- Deliver programs that create a service level of excellence for internal and external guests.
- Communicate effectively with all levels of employees and external contacts.
- Review and comprehend all necessary documentation.
- Inspect and maintain all responsibilities’ areas.
- Stock and retrieve supplies as needed.
- Be respectful and accountable.
