Manager, Stewarding

Position Summary

The incumbent is responsible for maintaining a sanitary environment for food and beverage preparation and storage, providing clean service ware and utensils for the entire operation. They supervise the day‑to‑day operations of the stewarding department, including total maintenance and sanitation in all food production service areas, ensuring all outlets have sufficient equipment to perform adequately.

• Creates an atmosphere that induces guests to choose Hard Rock Casino Northern Indiana as their gaming entertainment, actively building and retaining guest relations and mentoring team members to provide superior guest service.
• Hires, trains, motivates, evaluates, and manages food and beverage staff to ensure they receive adequate guidance and resources to accomplish established department objectives.
• Develops, implements, and monitors department standards, guidelines, and objectives, and maintains administrative processes such as budgeting and staffing to ensure proper planning and efficient operation.
• Directs the maintenance of cleanliness of back‑of‑house areas, including the main kitchen, storage areas, dumpster, loading dock, EDR, and washing areas.
• Manages the general cleaning schedule so that food‑service areas meet or exceed health inspection requirements.
• Assists in inventory maintenance and coordination of the distribution of all big four items (china, glassware, linens, and silver), including visual inspection to ensure cleanliness and safe transportation.
• Assists Executive Steward and Culinary Management in overseeing and ensuring all Health Code Standards relating to cleanliness and sanitation requirements are maintained at all times in kitchens and back‑of‑house areas.
• Controls equipment storage areas and the issuance of equipment for the Food Service Department.
• Attends and participates in meetings, completing follow‑up as assigned.
• Performs work regularly and predictably; responsible for cleaning and sanitizing work and public spaces.
• Other duties as assigned.

High school diploma or equivalent, and a minimum of 1–3 years experience as a Stewarding Supervisor, or an equivalent combination of education and experience.

• Must obtain and maintain all licenses and certifications required by Federal, State, and Indiana Gaming Commission regulations.
• Must successfully pass a background check.
• Must successfully pass a drug screening.
• Must be at least 21 years of age.
• Must be able to work holidays, weekends, and flexible shifts.
• Prior experience in the gaming industry is strongly preferred.

PERTINENT federal, state, and local laws, codes, and regulations; all operations of the Stewards’ Department; demonstrated organizational skills and budgeting experience; full understanding of financials.

• Communicate clearly and concisely, both orally and in writing.
• Be flexible to work varying shifts and time schedules as needed.
• Deliver programs that create a service level of excellence for internal and external guests.
• Tie training to the organization’s strategic goals.
• Ability to communicate effectively with all levels of employees and outside contacts.
• Review and comprehend all necessary documentation.
• Inspect and maintain all areas for which they are responsible.
• Stock and retrieve supplies as needed.
