Pastry Chef role at Bon Appétit Management Company. Salary: 80,. Our passion is food and outstanding service. We are a restaurant company that operates in contract food service, offering opportunity to be creative and grow with a focus on local sourcing and current culinary trends.

• Full culinary management of food service operation to include inventory, ordering and receiving
• Knowledge of P&L accountability and contract-managed service experience is desirable
• Proficient in menu development, cost controls, purchasing and inventory with a focus on sourcing and utilizing local food products
• Supervises the daily production and distribution of all pastries, desserts and baked goods
• Ensures recipes and standards are followed, food costs are controlled and appropriate quantity is prepared based on production needs
• Ensures proper food handling, presentation, portion control and maintenance of proper serving temperatures
• Monitors and controls the maintenance and sanitation of the pastry kitchen and equipment to meet standards and regulations
• Supervises hourly kitchen/pastry associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews and recommending disciplinary action as appropriate
• Helps plan and implement seasonal menus
• Orders and maintains pastry supplies and products to ensure appropriate inventory levels
• Performs other duties as assigned

• Must have a working knowledge of HACCP
• Three years of culinary management experience in contract food service, fine dining setting, or restaurant with inventory and purchasing knowledge and control
• Extensive knowledge of food and catering trends with focus on quality, production, sanitation, food cost controls, and presentation
• Experience with exposition cooking
• Knowledge of P&L accountability and contract-managed service experience is desirable
• Serv Safe certification is a plus
