Location: Halifax Regional MunicipalityPosition Summary
The Sous Chef assists with the management of the food outlet kitchens. They oversee food preparation, ensure adherence to all policies and procedures, maintain food and labour costs, motivate and lead by example and provide a learning environment all while maintaining a safe and welcoming work environment.

Key Accountabilities
Provides leadership, direction and mentoring to the culinary operationSchedules and supervises culinary employees; assigns shift work assignmentsDirects and trains employees to prepare, pre-cook, cook and present menu items in a timely fashion, following standardized recipesPrepares, pre-cooks, cooks and presents menu items; assists on the floor as requiredMaintains budgeted labour, and food costs as directedSubmits food product requirements for approval; may order food and non-food product through regional buying programsAssists in the development of new food items, standardized procedures and par inventory levelsReviews monthly inventory reports; analyze discrepancies and takes appropriate action; conducts inventory countsDevelops performance objectives, delivers performance evaluations for direct reports and actively participates in the recruitment and hiring processFinds ways to play

Embraces the Casino Nova Scotia culture and philosophy and has a playful, infectious and "all about the guest" attitude!High School Diploma;
Post-Secondary education in culinary management or suitable combination of education and experience an assetRed Seal certification through ITA or current enrollment in the programFood Safe Level 2, Safe Food Handling or Food Handler Certificate; MSDS; WHMISExcellent Guest Service skillsDemonstrated leadership skillsComputer literacy in MS OfficeMinimum 3 years of culinary management experienceWork Environment Considerations
