Summary

The Food & Beverage Manager ensures a high standard of appearance, hospitality, service, and cleanliness throughout all dining areas. This position ensures timely and efficient food service while assisting with the overall supervision and operation of the Food & Beverage (F&B) Department. The Food & Beverage Manager directly supervises and trains F&B staff, ensures cleanliness, safety, and proper setup of F&B areas, enforces departmental policies and procedures, assists with budget management, and supports initiatives to increase revenue through repeat business and higher check averages.

Essential Duties & Responsibilities

• Provides and assists with the direct supervision of F&B service staff to ensure exceptional food and beverage service to Guests and Members.
• Resolves Guest and Member concerns, coordinating resolution with Director of F&B, Executive Chef, or other members of the management team as appropriate.
• Inspects F&B dining areas upon arrival, during work shift, and prior to end of work shift to ensure a clean and professional environment that meets Club standards.
• Assists in hiring, training, supervising, scheduling, and evaluating all F&B staff.
• Confirms time, attendance and hours worked and approves weekly departmental payroll prior to submitting it to the Accounting department.
• Produces daily or meal-period revenue analyses and other reports from point of sale (POS) systems used in the dining room.
• Performs daily POS closeout and tip distribution requirements.
• Verifies proper distribution of tips and hours for employees and submits to the Accounting department.
• Provides appropriate reports concerning employee hours, schedules, pay rates, job changes, tip pools, etc.
• Assures that all side-work is accomplished and that all cleaning of equipment and storage areas is completed according to schedule.
• Assists with and directs pre-meal meetings with dining room personnel; relays pertinent information such as house count and menu changes, special member requests, etc.
• Ability to lead staff through all service types such as American, Russian, French, and Buffet.
• Ensures the correct appearance, cleanliness and safety of dining room areas, equipment, and fixtures; checks the maintenance of all equipment in the dining room and reports deficiencies and maintenance concerns.
• Makes suggestions about improvements in dining room service procedures and layout.
• Assists with training staff on all aspects of the POS system.
• Assists with and assures that the dining room and other club areas are secure at the end of the business day.
• Helps maintain an inventory of dining room items including silverware, coffee pots, water pitchers, glassware, flatware and china, salt and pepper holders, sugar bowls and linen and ensures that they are properly stored and accounted for.
• Helps monitor F&B labor and supplies budget; adjusts achieve financial goals.
• Ensures that F&B staff performs all closing and side-work duties prior to end of shift.
• Assists in the scheduling of F&B staff; coordinates scheduling with Director of F&B and Executive Chef, or their designees, as needed.
• Plans dining room set-up based on anticipated guest counts and client needs.
• Inspects employees to ensure that they are always in proper and clean uniforms.
• Replenishes Guest and Member beverages as necessary; serves guests and members; cleans and bus tables as needed.
• Monitors F&B service staff activity; takes appropriate action to assist staff during volumes of increased activity and ensures Member and Guest satisfaction.
• Monitors and reorders supplies and inventory as needed from the Club's Purchasing Agent; communicates and coordinates purchases with the Executive Chef and Director of Food and Beverage.
• May serve as the Club's opening and closing manager or manager on duty.
• Works with the Director of Food and Beverage and Executive Chef to update, review and print weekly menu changes.
• Assists in developing wine lists and beverage promotions.
• Ensures that local and state laws and the club's policies and procedures for the service of alcoholic beverages are consistently followed.
• Assists F&B service staff in taking orders from Members and Guests; enters orders into point-of-sale (POS) system according to Club bookkeeping and check-out procedures.
