Description

The Food & Beverage Manager directs and manages the daily operations of Highlands Dining Services. This position oversees purchasing, catering, staffing, scheduling, training, and dining operations while ensuring a high-quality dining experience for residents, guests, and staff.

The Food & Beverage Manager is responsible for maintaining operational efficiency and customer satisfaction while managing departmental performance within established budget guidelines.

What You'll Do

Dining Operations & Customer Service

  • Direct daily dining operations and establish goals for assigned dining venues.
  • Ensure high-quality food, service, and customer satisfaction.
  • Respond professionally to resident and customer needs, questions, and concerns.

Food Safety & Compliance

  • Ensure compliance with food safety, sanitation, Health Department, and ABC requirements.
  • Maintain policies and procedures related to food safety and sanitation.
  • Coordinate alcohol orders for catering and special events.

Budget, Purchasing & Inventory

  • Prepare and administer operational budgets.
  • Monitor weekly cost-control reports and maintain expenses within budget.
  • Manage purchasing and inventory procedures.
  • Complete weekly physical inventories and annual inventory counts.
  • Develop and maintain annual capital expenditure plans and budgets.

Menu & Quality Management

  • Create and maintain menu cycles incorporating nutrition principles, resident preferences, and regional food selections.
  • Review menu cycles at least twice annually.
  • Oversee recipe standardization, portion control, food costs, production records, and waste reduction.
  • Monitor resident satisfaction and make adjustments as needed.

Catering & Facilities

  • Coordinate, plan, and supervise catering events.
  • Ensure events are professionally executed and meet customer satisfaction expectations.
  • Oversee kitchen equipment maintenance, preventative maintenance, and necessary repairs.

Staffing & Team Leadership

  • Schedule, direct, and oversee department staff.
  • Maintain appropriate staffing levels with qualified and properly trained employees.
  • Recruit and select qualified candidates.
  • Conduct orientation and training for new hires.
  • Review and approve employee time records.
  • Provide coaching, counseling, and corrective action as necessary.
  • Conduct monthly employee meetings and communicate operational updates.

Communication & Continuous Improvement

  • Maintain positive relationships with residents and respond to concerns in a timely manner.
  • Coordinate interdepartmental work and maintain effective working relationships.
  • Identify and implement ideas that improve Highlands Dining operations.
  • Attend industry conferences, trade shows, and other opportunities to stay informed of emerging trends and best practices.
  • Attend a minimum of two food industry conferences or trade shows annually.
Requirements
  • Bachelor’s degree in Business Administration, Hospitality Management, or a related field preferred, or an equivalent combination of education and experience.
  • Minimum of two (2) years of supervisory experience
    , preferably in the food service industry.
  • Ability to serve as an ABC Manager as required.
  • Knowledge of basic nutrition principles and menu planning.
  • Knowledge of food safety, sanitation, ABC laws and regulations, food preparation methods, housekeeping practices, and food service techniques.
  • Strong customer service, organizational, leadership, and employee relations skills.
  • Proficiency with personal computers and office equipment.
  • Working knowledge of Microsoft Office applications, including Word, Excel, Publisher, and PowerPoint.
Physical Demands
  • Lift, carry, push, pull, or otherwise move equipment, supplies, and materials weighing up to 50 pounds
    .
  • Utilize proper lifting and material-handling techniques.
  • Walk, stand, bend, and move throughout the campus for periods of up to eight hours or longer as required by operational needs or special events.
