Position: Baker, NA-08.

Overview

The incumbent is involved with the preparation of a full range of baked products found on regular and special diet menus such as breads, rolls, cakes, cookies, biscuits, pastries, puddings, fillings and icings. The incumbent makes more complicated baked products such as puff pastry, quick breads, batter and sponge cakes, and Danish pastries. Grade 8 bakers receive assignments from the supervisor either orally or through menus, recipes, and worksheets.

The incumbent will plan their work and select the tools and equipment to prepare attractive, appetizing baked products in the quantities and at the time desired. The bakers decide whether to adjust recipes, substitute, or leave out ingredients to change or improve the product. From appearance, smell, temperature, and consistency, they decide when items are properly baked. Their completed work is checked by the supervisor to insure foods are baked according to instructions.

Responsibilities
  • Receives assignments from the supervisor in charge and follows directions from menus, recipes, and worksheets.
  • Plans own work and selects the tools and equipment to prepare baked products in the required quantities and at the required time.
  • Determines whether to adjust recipes, substitute or leave out ingredients to change or improve the product.
  • Analyzes appearance, smell, temperature, and consistency to decide when items are properly baked.
  • Work is subject to spot checks during progress and upon completion to assure schedules are met.
Skills and Knowledge
  • Knowledge of the full variety of ingredients used in baked goods (e.g., hard or soft flour, leavening agents, soda, butter or shortening, hard, soft, or mineral water).
  • Knowledge of oven timing and temperature control.
  • Knowledge of the effect of altitude and humidity on bakery products.
  • Knowledge of food handling and storage practices and ability to requisition supplies for daily baking requirements.
  • Knowledge of health regulations and sanitation standards.
  • Ability to adjust measurements and revise recipes to improve taste, change quantities, or conform to special diet requirements.
  • Skilled in the use of bakery tools and equipment including powered machines.
Working Conditions
  • Work involves exposure to extreme heat and extreme cold temperatures.
  • Extended periods of standing on concrete or tile floors.
  • Exposure to burns, cuts and other injuries from equipment, ovens, stoves and kettles.
  • Protective footwear, hearing protection, gloves, or other safety and food handling items are required by food handling guides.
Physical Demands
  • Frequent lifting, pulling, and pushing; constant standing and walking.
  • Must be able to lift up to 50 pounds alone and up to 100 pounds with assistance.
Requirements
  • Direct Deposit and Social Security Card are required upon appointment.
  • Meet qualification/eligibility/background requirements for this position.
  • Satisfactory completion of employment verification (E-Verify) check.
  • One year probationary period may be required.
  • A physical examination may be required.
  • Must be able to obtain a Tier 1 background investigation.
  • Must be able to work weekdays, weekends, holidays and various hours of the day and week when required.
Qualifications
  • High school diploma or equivalent.
  • Experience with preparation of baked products and knowledge of the full variety of ingredients used in baked goods.
  • Ability to use bakery tools and equipment, including cleaning and sanitation practices.
  • Attention to detail, especially when performing quality inspections of ingredients and products.
  • Basic math and computer skills.

  • Area of consideration:
    This job is open to candidates who live in the Island of Oahu. If area of consideration is expanded, all candidates will be considered. If you reside outside the local commuting area, relocation costs will be at your expense.
  • PCS Costs:
    Payment of Permanent Change of Station (PCS) costs is not authorized.
  • Allowances and Differentials:
    This job falls under the Federal Wage Schedule (FWS) pay system. Overtime rules and possible premium pays apply according to FWS regulations.
