In this fast-paced wholesale distribution environment, you will trim, debone, and cut a variety of meats, ensuring quality, yield, and consistent sizing for restaurants, healthcare, and hospitality customers. Responsibilities include operating knives and trimming tools safely, following HACCP and USDA guidelines, maintaining sanitation and traceability records, and meeting productivity and accuracy targets.

Responsibilities

• Trim, debone, and cut various meats to exact customer and company specifications
• Operate knives and trimming tools safely and maintain sharp, clean equipment
• Follow HACCP, USDA, and company food safety and sanitation procedures
• Read production orders and labels to ensure correct product, weight, and portions
• Inspect meat for quality, appearance, and proper trim, adjusting as needed
• Meet established productivity, yield, and accuracy standards for daily production
• Maintain clean, organized work areas and follow sanitation schedules
• Record lot numbers, yields, and other production data for traceability
• Work collaboratively with production and warehouse teams to meet order deadlines
• Follow all safety, PPE, and ergonomic guidelines in a refrigerated environment
