Job Summary

Support the Tortilleria Manager in executing daily production scheduling, operating and maintaining equipment, ensuring safety and quality standards, and contributing to a clean, efficient production environment.

Essential Duties and Responsibilities
  • Assist the Tortilleria Manager in daily production scheduling of the entire facility.
  • Execute the lock‑out/tag‑out program within the area of responsibility.
  • Maintain a neat, well‑groomed appearance in accordance with company dress regulations, including approved headwear or hair net.
  • Cook “Nixtamal”, operate the mill, package, count, and even up “tortillas”.
  • Operate various machinery, including stone grinders.
  • Learn product names and prices used in the Tortillería department.
  • Maintain general housekeeping and sanitation standards in compliance with store policy, department standards, state and local health regulations.
  • Handle damaged and spoiled products according to company policy and assist in controlling the level of damaged goods.
  • Prepare machines for operation by equipping them with the appropriate tools; run and monitor machines while operating and set up according to blueprints and specifications.
  • Exercise quality control by comparing product output to specifications.
  • Report any unsafe equipment or malfunction immediately.
  • Work with the Maintenance department to maintain a preventive maintenance program for all related equipment.
  • Ensure safety and well‑being of plant associates.
  • Execute the quality assurance program per company standards.
  • Maintain the work area or assembly line in optimum sanitation condition and ensure execution of SOPs, HACCP and SSOPs.
  • Follow allergen program standards and report deviations immediately.
  • Fill all paperwork accurately related to temperature checks, traceability and sequential process.
  • Conduct formulations with precision, double‑check weights and measures, record procedural steps, and initial completed steps.
  • Ensure equipment is properly calibrated and sanitized before use.
  • Rigorously execute GMP standard operating procedures.
  • Prevent and report potential cross‑contamination situations.
  • Collaborate with sanitation to clean and maintain equipment in optimal sanitary condition.
  • Perform any other work‑related duties as assigned.
  • Maintain good communication within the department and across the organization.
  • Assist in training associates when assigned.
  • Check that tools and machines are in good working condition.
  • Inspect machines periodically throughout the shift and adjust machine speeds as necessary.
  • Follow strict safety rules and wear protective equipment such as earplugs, gloves and goggles.
  • Comply with safety policies and procedures; read all safety committee bulletins.
Requirements and Conditions Education/Experience

High school diploma preferred but not required.

Skills Required
  • Ability to calculate weights, measures, gross margins, markup, percentages, proportions, ratios and volumes.
  • Verify vendor invoice charges and counts, and complete required accounting reports including inventory and receiving.
  • Basic computer skills helpful.
  • Effective verbal and written communication; ability to respond promptly to pages for assistance and to answer telephones.
  • Proficient reading, writing, analyzing and interpreting the English language.
  • Compose reports, business correspondence and departmental memos.
  • Mechanical aptitude; ability to shut down a machine and correct minor errors.
  • Capable of working in a fast‑paced environment with minimal supervision.
  • Be able to pass a standard drug test and qualify as drug‑free under the Drug Free Workplace Act of 1988.
