Base pay range
Splendido Mare, A Belmond Hotel, part of the LVMH Group, is a charming guesthouse in the heart of the Portofino. Its celebrated restaurant, DaV Mare, embodies all the pleasures of piazzetta living through refined cuisine, curated in partnership with the 3-Michelin-star Cerea family. Awash with nautical spirit, our gem on the Italian Riviera celebrates the art of Ligurian living in its purest form.
For the next season, we are looking for a Head Sommelier to join our team.
The ideal candidate is passionate about hospitality and comfortable with challenges. He/She is willing to provide authentic and luxury experiences, demonstrating care, confidence, curiosity and community.
He/she will report to the Restaurant Manager.
Main duties & responsibilities

Anticipate guests needs and handle guest complaints, providing an excellent and personalized guest experience according to our service standards
Cooperate with the Restaurant Manager for staff development
Develop special events about wine Inventory and requisitions: assist in monitoring stock levels and ordering replacement deliveries.
Avoid any waste and capable to control beverage margins
Cooperate with the bar manager to establish the wine selection
Compliance with health and safety regulations
Fully responsible for Banqueting wine orders and consumption

Requirements

Working experience of minimum 3 years within the same role in Luxury Hotel's Industry
Experience in Fine Dining Restaurant required (Michelin is a plus)
Fluent in English and Italian; a third language preferred
Sommelier AIS or FISAR
Professional knowledge of Italian cuisine and Italian & International wines
HACCP certification
Effective communication, emotional intelligence, adaptability

We offer seasonal Labour contract according to C.C.N.L. Settore Turismo - Level 2, Head Sommelier

Start date:

March 2026 to End date:
January 2027, with the aim of a continuous collaboration over subsequent seasons at Splendido Mare and a career path.
Monthly gross salary around 3.000€ + separate payslip for 13°,14° and TFR
Accommodation in our staff house including breakfast;
Bus ticket as benefit for the contract period;
