Manages the flow of food at any rate, monitoring ticket times, food waste, and holding periods.;
Performs each kitchen station with master skill level.;
Continuously trains and monitors BOH employees to uphold Zaxbys standards for high quality food and safe preparation.;
Trains others on proper food procedures and FIFO procedures.;
Oversees and assists BOH employees to complete the BOH checklist and Time-Temp Log by shift end.
