Position Summary
We are seeking a licensed, experienced Dietary Manager to join our skilled nursing facility team on a full-time basis. The Dietary Manager is responsible for overseeing all aspects of the dietary department, including nutritional care planning, meal production, regulatory compliance, and staff management. This position plays a critical role in ensuring the health, dignity, and satisfaction of our residents through high-quality nutritional services.
Licensure & Credentials (Required)- Active Certified Dietary Manager (CDM, CFPP) credential issued by the Association of Nutrition & Food service Professionals (ANFP), OR
- Registered Dietitian (RD/RDN) licensed in the State of Kentucky
- Must meet Kentucky Department of Community Health (DCH) requirements for dietary services in long-term care facilities
- Current Serv Safe Food Manager Certification (or ability to obtain within 90 days of hire)
- Nutritional Care
- Develop, implement, and monitor individualized resident care plans in collaboration with the interdisciplinary team
- Conduct nutritional assessments and MDS (Minimum Data Set) documentation in compliance with CMS requirements
- Manage therapeutic diet orders, texture modifications, and oral supplement programs
- Participate in Care Plan meetings and communicate dietary needs to nursing, therapy, and social services staff
- Operations & Food Service
- Oversee daily food production, meal service, and tray delivery to ensure accuracy and resident satisfaction
- Manage department scheduling, staffing levels, and performance of dietary aides and cooks
- Maintain food cost controls, inventory management, and ordering within established budget parameters
- Ensure compliance with standardized recipes, portion control, and proper food temperatures
- Regulatory Compliance
- Ensure full compliance with CMS F-Tag requirements (including F800–F812 and related infection control standards)
- Maintain department readiness for state surveys and unannounced inspections by the Kentucky DCH
- Address and document any deficiencies identified during internal audits or state surveys in a timely manner
- Maintain HACCP (Hazard Analysis Critical Control Point) protocols and food safety standards at all times
- Leadership & Administration
- Hire, train, supervise, and evaluate dietary department staff
- Conduct departmental in-services and ongoing staff education on food safety, diet modifications, and resident dignity
- Maintain accurate records including diet sheets, temperature logs, and resident preference documentation
- Collaborate with the Administrator and Director of Nursing on departmental goals and quality improvement initiatives
- Minimum 2 years of experience as a Dietary Manager in a skilled nursing or long-term care setting (required)
- Demonstrated knowledge of CMS regulations and Kentucky state survey process for dietary services
- Experience with MDS documentation and care plan development preferred
- Strong leadership, communication, and organizational skills
- Proficiency with dietary software and electronic health records (EHR) systems preferred
- Ability to stand for extended periods and lift up to 35 lbs as required by the role
