Our Banquet Cook will participate in culinary production for banquet and special events, including hot and cold food preparation, batch cooking, protein preparation and fabrication, preparation of sauces and accompaniments, banquet plating and buffet setup, maintaining proper food handling procedures, and ensuring cleanliness and sanitation standards throughout the kitchen.

• Reports to the Sous Chef or Banquet Chef to receive daily production objectives, assignments, and priorities.
• Reviews banquet menus, setup requirements, and preparation methods prior to service.
• Prepares and cooks banquet menu items according to established recipes,portion standards, and presentation guidelines.
• Operates banquet cooking equipment, including ovens, ranges, griddles, steamers, and warming units.
• Performs batch cooking, including sauces, soups, proteins, vegetables, and garnishes, to meet large-scale service needs.
• Ensures all dishes are properly seasoned, balanced in flavor, and consistent in quality.
• Assists with miseenplace and setup for banquet stations, buffets, and plated service events.
• Monitors product, ingredient, and supply levels throughout preparation and communicates shortages to kitchen leadership.
• Maintains clean, organized, and sanitary workstations, equipment, and storage areas.
• Follows proper food handling, storage, labeling, and FIFO rotation procedures.
• Ensuresproper temperatures for cooking, holding, and serving banquet items.
• Maintains awareness of food allergies and ensures proper labeling and separation of allergens.
• Assists with opening and closing duties for banquet kitchens and service areas.
• Supports the kitchen team to ensure smooth execution of banquet events.
• Demonstrates proper knife skills, safe food preparation techniques, and knowledge of large-scale cooking methods.
• Works efficiently under pressure to meet high-volume service timelines.
