Salary Range: $16.00 To $20.00 Hourly
Position Overview:
The Sushi Cook is responsible for preparing high-quality sushi and other Japanese cuisine in accordance with restaurant standards. The ideal candidate is highly skilled in sushi preparation techniques, detail-oriented, and committed to delivering beautifully presented and flavorful dishes. The Sushi Cook must have a deep knowledge of fish, knife skills, and an understanding of traditional sushi-making practices.
Key Responsibilities:
Sushi and Japanese Cuisine Preparation:
- Prepare sushi, sashimi, nigiri, maki rolls, and other Japanese dishes according to the restaurant’s menu and recipes.
- Ensure that all ingredients, including fish and rice, are fresh and handled with care to maintain the highest quality.
- Maintain excellent knife skills, including filleting fish and preparing cuts of seafood for sushi.
Presentation and Plating:
- Ensure that all sushi dishes are beautifully presented, with attention to detail in garnishing, cutting, and arrangement.
- Maintain consistency in portion sizes and presentation to uphold restaurant standards.
Food Safety and Hygiene:
- Follow all health and safety regulations to ensure that food is handled, stored, and prepared in a clean and safe environment.
- Maintain cleanliness in the sushi station, including sanitizing cutting boards, knives, and other tools regularly.
Inventory Management:
- Monitor ingredient levels, especially perishable items such as seafood, and communicate any restocking needs to the kitchen manager.
- Ensure that all ingredients are stored properly to preserve freshness and quality.
Collaboration with Team:
- Work closely with kitchen staff and management to ensure efficient kitchen operations and timely delivery of orders.
- Assist in prepping ingredients and maintaining an organized sushi station.
Qualifications:
- Previous experience as a Sushi Cook or in a Japanese kitchen is required.
- Strong knife skills and a deep knowledge of sushi preparation techniques.
- Knowledge of food safety regulations and best practices in handling raw seafood.
- Ability to work in a fast-paced environment while maintaining attention to detail.
- Flexibility to work evenings, weekends, and holidays as required.
