Salary: $18.64 – $23.58/hour

General Position Summary

Schedules and prepares meals for Adults in Custody (AIC’s) of the County's Detention Facility.

Essential Functions
  • Stores, prepares, distributes and serves meals under sanitary conditions; performs duties such as washing and cutting vegetables, defrosting frozen foods, opening cans, cooking, baking, etc.
  • Prepares trays containing appealing and palatable serving portions, ensuring that dietary and menu requirements are met as approved by a certified dietician.
  • Performs routine sanitation assignments to maintain sanitary conditions in accordance with State Health Division requirement (ORS 624.100) including cleaning, mopping, and waxing of floors.
  • Supervises the loading and delivering of food carts to housing pods.
  • Supervises prisoner workers by assigning tasks, evaluating performance, etc.; responsible for key and equipment controls.
  • Responsible for inventory and procurement of supplies, equipment and food product upon approval of the Cook Supervisor.
  • Operates food service equipment such as mixers, steamers, ovens, grills, dishwasher, etc. in order to accomplish tasks; utilizes such tools as knives, cleaver, etc.; controls and inventories material and equipment.
  • Prepares special medical and religious diets as approved by facility medical personnel and/or the facility Commander.
  • Performs miscellaneous kitchen tasks such as security of kitchen cutlery, spices, cleaning agents, etc.
  • Maintains order and respect for authority; observes and anticipates potential hostile behavior of AICs in custody; reports to appropriate supervisor.
  • Completes various reports of activities during shift; reports on individual behavior; informs personnel on next shift of any unusual occurrences.
  • Follows and enforces, when appropriate, jail safety and security policy and procedure. Participates in emergency drills, responds to fires and natural disasters.

Education, Certification, & Experience
  • Knowledge of dietary needs and portion control procedures
  • Knowledge of sanitation and infection control methods for food and food preparation
  • Knowledge of volume cooking methods and food handling techniques
  • Valid Oregon Driver’s License
  • Oregon Food Handler’s Card
Knowledge, Skills & Abilities
  • Language

    Skills:
  • Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
  • Ability to write routine reports and correspondence.
  • Ability to speak effectively before groups of customers or employees of organization.
  • Mathematical

    Skills:
  • Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
  • Reasoning Ability:
  • Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations.
