Head Cook - Camp Forbes
Under general supervision, supervises and assists in the preparation and cooking of food in a hospital or institution. Supervises the activities in a kitchen. Performs related duties as required. TYPICAL TASKS:
Supervises cooks and assists in the preparation and cooking of foods. Supervises the cleaning of kitchen equipment. Supervises and assists in the preparation and cooking of meats, vegetables, and soups. Supervises and assists in the preparation of baked goods, beverages, cereals, desserts, and salads. Cut meats. Instructs employees and inmates engaged in kitchen activities. Check ovens. Checks food carts. Tags food carts.
Delivers food to dining room. Checks food in storage. Maintains food records. Handles supplies.
- High school diploma or equivalent (culinary degree or certificate preferred)
- 3 years of professional cooking experience, including1–2 years in a supervisory or lead role
- Strong knowledge of cooking techniques, menu execution, and food presentation
- Proven experience with kitchen operations(prep, line, inventory, ordering)
- Solid understanding of food safety, sanitation, and HACCP standards
Prepares mandated menus according to nutritional guidelines of the State of Ohio. Supervises kitchen staff. Oversee all food preparation and sanitation processes are being followed. Prepare meals for camp participants daily. Supervise and coordinate the daily activities of kitchen staff. Maintain cleanliness and organization of kitchen, equipment, and storage areas. Monitor food quality, taste, appearance, and temperature prior to service. Order food, supplies, and equipment;
maintain proper inventory levels and minimize waste. Receive and inspect deliveries for quality, accuracy, and proper storage. Accommodate special dietary needs, allergies, and cultural requirements when applicable. Enforce safe work practices and proper use of kitchen equipment. Address and resolve operational issues promptly to ensure uninterrupted food service. Communicate effectively with management regarding staffing, supplies, and operational needs.
