The Director of In-Room Dining is responsible for the strategic leadership, operational excellence, and financial performance of the In-Room Dining (IRD) department at Wynn Las Vegas and Encore. This position oversees all aspects of guest room dining operations, including service delivery, culinary coordination, staffing, training, quality assurance, budgeting, and guest satisfaction.

The Director ensures that all in-room dining experiences reflect Wynn Resorts' commitment to Forbes Five-Star service standards, luxury hospitality, and exceptional attention to detail. Working collaboratively with Food & Beverage, Hotel Operations, Culinary, Stewarding, Purchasing, and Revenue Management teams, this leader drives continuous improvement while maintaining the highest levels of guest satisfaction and operational efficiency.

Essential Responsibilities Leadership & Operations
  • Provide strategic leadership and direction for all In-Room Dining operations across Wynn Las Vegas and Encore.
  • Develop departmental goals, operating procedures, service standards, and performance expectations aligned with resort objectives.
  • Lead and inspire management and line-level team members to create an exceptional guest experience.
  • Ensure seamless execution of all in-room dining services, including breakfast, all-day dining, overnight service, special requests, and large-scale guest orders.
  • Monitor service delivery to ensure consistent compliance with Wynn service standards and Forbes Five-Star expectations.
  • Conduct regular operational reviews and implement process improvements to increase efficiency and service excellence.
Guest Experience
  • Ensure every guest interaction reflects Wynn's luxury hospitality philosophy.
  • Resolve complex guest concerns and service recovery situations in a timely and professional manner.
  • Analyze guest feedback, satisfaction scores, and service metrics to identify opportunities for improvement.
  • Develop initiatives that enhance personalization, guest engagement, and memorable dining experiences.
Financial Management
  • Manage departmental budgets, labor costs, forecasting, and financial performance.
  • Analyze revenue trends, productivity measures, menu performance, and operational expenses.
  • Develop strategies to maximize profitability while maintaining service standards.
  • Monitor inventory controls, purchasing processes, waste reduction initiatives, and cost management practices.
  • Collaborate with Revenue Management and Food & Beverage leadership to optimize pricing and promotional strategies.
Talent Development
  • Recruit, train, mentor, and develop management and hourly team members.
  • Foster a culture of accountability, engagement, teamwork, and continuous learning.
  • Conduct performance evaluations and succession planning initiatives.
  • Ensure all team members receive appropriate onboarding, operational training, and service development opportunities.
  • Promote a positive work environment that supports Wynn Resorts' values and culture.
Compliance & Safety
  • Ensure compliance with all Wynn Resorts policies and procedures.
  • Maintain adherence to Nevada health regulations, food safety standards, sanitation requirements, and OSHA guidelines.
  • Monitor compliance with liquor regulations where applicable.
  • Ensure all required certifications, licenses, and work cards remain current.
Collaboration
  • Partner with Executive Chefs, Property Leadership, and other resort departments to support seamless guest experiences.
  • Participate in strategic planning, capital improvement discussions, and operational innovation initiatives.
  • Support resort-wide Food & Beverage objectives and special projects as assigned.
Required
  • Minimum 5 years of progressive Food & Beverage leadership experience, including multi-outlet or luxury hotel dining operations.
  • Demonstrated success managing departmental budgets, labor controls, and financial performance.
  • Strong knowledge of luxury hospitality operations and guest service principles.
  • Proven ability to lead, motivate, and develop high-performing teams.
  • Exceptional verbal and written communication skills.
  • Strong analytical, organizational, and problem-solving abilities.
