**** THE JOB:
** As a Sous Chef at the brand new, upscale Carbone Riviera in Bellagio, you’ll play a key leadership role in one of the most anticipated culinary openings on the Las Vegas Strip. You’ll support daily kitchen operations, guide and develop cooks, and ensure every dish meets the highest standards of quality and presentation. Working alongside acclaimed chefs and a talented brigade, you’ll bring coastal Italian flavors to life in a high-energy, fine dining environment.

** THE DAY-TO-DAY:
*** Maintains quality and proper presentation of food and drives the customer relationship management system by ensuring that all such orders and inventories are handled correctly.
* Expedites all food orders to set quality standards and presentation.
* Communicates with chefs, management, employees, and guests efficiently with proper reporting and meetings, while providing appropriate leadership for subordinates.
* Schedules and maintains the budgeted labor costs as well as potential food cost.
* Understands and utilizes Stratton Warren and Coupa systems for properly purchasing, releasing orders and handling cost transfers.
* Maintains a hygiene level above that required by the local Health Department and ensures that food sanitation, safety and proper food handling functions are practiced on a daily basis.
** THE IDEAL CANDIDATE:
*** Is 21+ years of age
* Has a high school diploma, GED, or equivalent
* Has 1+ years of experience in a high-volume fine dining restaurant
