• Implement and maintain control measures to keep Food and Beverage costs, productivity, labour costs and operating supply costs in line with the budget.
• Plan budgets and review forecasts for revenue and expenditure on a monthly basis.
• Carry out Duty Management shifts according to business needs.
• Analyse and submit month‑end reports, identifying deviations from business plan goals.
• Participate in management meetings to review progress towards business plan goals and develop the annual business plan related to the outlet.
• Plan, implement and measure profit enhancement programs by working with the kitchen and sales department.
• Prepare and submit post‑mortem promotion reports to the General Manager upon completion of promotion.
• Daily manage Food and Beverage outlets, ensuring highest standards of service.
• Plan, organise and direct overall Food and Beverage operation, administration, marketing and promotion of the outlet.
• Report on profitability and revenue generation.
• Ensure constant liaison with the Head Chef, Conference and Events Manager and Operations Manager.
• Prepare weekly and monthly forecasts for Restaurant, Bar and Room service.

• Strong leader with interpersonal, training and communication skills.
• Service‑oriented with an eye for detail, a team player and team motivator.
• Experience in budgeting, financial analysis and business planning.
• Good understanding of food hygiene and Health and Safety procedures.
