The Part-time Dietitian for Counseling and Prevention Services (CAPS) provides nutrition counseling to students seeking support for eating concerns, including eating disorders. As a member of a multidisciplinary team, the Dietitian collaborates with mental health clinicians, medical providers, and other campus and community partners to support student well-being through an integrated care approach. Referrals may originate from both CAPS clinicians and external providers.

This is a part-time, non-benefited, hourly position that operates on a twelve-month fiscal year schedule and may work up to 20 hours per week.

This position is subject to annual renewal contingent upon funding availability and program needs.

Reporting Line:
This position reports to the Executive Director of Counseling and Prevention Services.

Nutrition counseling for eating concerns (80%)

  • Provide individual nutrition counseling to students experiencing eating concerns, including eating disorders.
  • Maintain accurate, timely, and confidential records of counseling services in the electronic health record used by CAPS.
  • Monitor incoming service requests and manage caseload responsibilities to support timely student access to care.
  • Assess client needs and make appropriate referrals to medical providers, therapists, or higher levels of care when indicated.

Indirect clinical care and coordination (10%)

  • Coordinate referrals and collaborate with clinicians and healthcare providers as part of an integrated and multidisciplinary care model.
  • Provide consultation to CAPS clinicians for eating disorders and nutrition-related concerns.

Other professional responsibilities (10%)

  • Participate in administrative and departmental activities as needed (e.g., weekly staff meeting).
  • May provide occasional outreach presentations or educational programming as needed.
  • May serve as preceptor or mentor for USU Nutrition students.

Minimum Qualifications:

  • Equivalent to graduation from a four-year college or university with a major in Nutrition Science or related field.
  • Minimum of two years' experience managing and developing nutrition and diet-based programs during which time the applicant has acquired and demonstrated the ability to perform essential duties of position.
  • Registered Dietitian with the Academy of Nutrition and Dietetics.
  • Current License to practice as a Certified Dietitian in the State of Utah (or ability to obtain within 6 months of employment.

Preferred Qualifications:

  • Demonstrated experience and/or expertise providing nutrition counseling for individuals with eating disorders.

Knowledge, Skills, and Abilities:

  • Effective time management skills and ability to work independently and collaboratively within a team.
  • Proficiency with basic computer applications and clinical documentation systems.
  • Strong oral, written and interpersonal communication skills.
  • Knowledge of evidence-based nutrition interventions for eating disorders and related concerns.
  • Commitment to ethical practice, professional standards, and student-centered care.
