Position Summary:

Lee’s Marketplace, a family-owned grocery chain, seeks an Overnight Production Baker to craft high‑quality, scratch‑made baked goods during overnight hours. The role involves preparing, baking, stocking, rotating, and maintaining inventory for breads, rolls, pastries, cakes, and specialty items. The ideal candidate is passionate about baking, adept at time management, and possesses strong knowledge of bakery production methods and food safety practices.

Key

Duties and Responsibilities:
  • Prepare and bake fresh breads, rolls, pastries, and other baked goods using bakery formulas.
  • Accurately mix, cook, and package products according to established recipes and batch sizes to ensure consistent quality.
  • Adjust production runs to meet demand forecasts and maintain proper inventory levels.
  • Follow the nightly production schedule to stock shelves with fresh product by opening, prioritizing tasks efficiently with minimal supervision.
  • Ensure all products meet Lee’s Marketplace standards for appearance, texture, and taste; label items appropriately.
  • Monitor batch consistency, baking times, temperatures, and product output; maintain a clean, sanitary workstation.
  • Adhere to food safety, allergen, and sanitation guidelines; properly store and clean equipment.
  • Assist in inventory control and report low stock or inconsistencies to the Bakery Manager.
  • Process orders via digital and written systems.
  • Perform additional duties as needed.
Guest Service:
  • Greet guests and team members courteously and provide knowledgeable assistance.
  • Promote high morale and professionalism within the department.
  • Assist customers with the Lee’s Marketplace website when requested.
Product Handling:
  • Ensure product freshness by rotating stock and checking expiration dates.
  • Store perishable items and dry ingredients at correct temperatures to prevent spoilage.
  • Maintain accurate inventory using FIFO to reduce waste.
  • Follow recipes exactly to preserve consistency and quality.
  • Package goods properly, label with pricing, ingredients, allergens, and dates.
  • Minimize waste and dispose of or recycle properly according to store policies.
Cleanliness and Safety:
  • Keep work area clean, organized, and safe.
  • Follow all safety and sanitation procedures.
  • Prevent cross‑contamination of allergens; label appropriately.
  • Report hazards or equipment issues to Store Director.
  • Respond to injuries or safety concerns promptly.
Team

Collaboration:
  • Work cooperatively with team members to achieve store goals.
  • Encourage teamwork and uphold Lee’s Marketplace mission and core values.
  • Participate in meetings and training sessions.
  • Assist other departments as needed.
  • Operate effectively in a fast‑paced, sometimes crowded, production environment.
  • Ensure products are sold before expiration.
  • Attend corporate meetings and contribute to productivity standards.
  • Following policies, promote a harassment‑free environment and report harmful situations.
  • Conduct performance evaluations and provide constructive feedback.

Position Requirements :
  • Age 18 or older.
  • Availability during overnight hours, including weekends and holidays.
  • Food Handlers certification required.
Physical Requirements:
  • Stand, walk, twist, sit, and bend for extended periods.
  • Lift and carry items up to 50 pounds.
  • Use hands and arms repetitively to push, pull, lift, and reach.
  • Occasionally stoop, crouch, kneel or crawl.
  • Navigate all production areas.
  • Lift floor‑to‑shoulder and overhead repeatedly.
  • Climb step stools or ladders when necessary.
Tools and Machinery:
  • Commercial mixers, ovens, and production machines.
  • Pallet jack, wheeler, trash compactor, fryers.
  • Slicers, knives, sheeters, wrapping machine.
  • Scales, trays, pans, racks.
  • Tempering tools, temperature‑controlled rooms.
  • Computers, phones.
Education or

Skills:
  • High school diploma or equivalent.
  • Minimum 1 year of baking or commercial bakery experience preferred.
  • Working knowledge of commercial baking equipment or willingness to learn.
  • Strong attention to detail and ability to follow recipes accurately.
  • Independent and team‑work capable during overnight hours.
  • Food Handlers Permit required or ability to obtain.
