At Lee’s Marketplace, a Popcorn and Sweets Production Clerk plays a key role in supporting the efficient and top‑quality production of commissary goods in our high‑volume commissary kitchen, which supplies multiple Lee's Marketplace locations, retail outlets, and event centers. This position is responsible for assisting with ingredient preparation, production, portioning, packaging, and labeling of over 6+ different popcorn flavors, cotton candy, fudge and more.

The Production Clerk ensures that all products meet quality and food safety standards, follows production schedules, and works collaboratively with team members to meet daily goals. This role requires attention to detail, adherence to recipes and protocols, an ability to work in a high‑volume production area, and a commitment to upholding Lee’s Marketplace standards.

Primary Position Duties
  • Safely set up, adjust, and operate bakery production equipment, such as popcorn kettles, tumblers, packaging equipment, mixers, ovens, and other equipment as needed.
  • Help with the production, development, preparation, and maintenance of commissary items in accordance with recipes and consistent quality standards.
  • Accurately measure, mix, cook, and package products according to established recipes and batch sizes to ensure consistent quality and taste.
  • Assist with the production of items according to demand forecasts, adjusting production runs as necessary to meet customer and retail needs.
  • Assist with maintaining proper inventory levels and ordering supplies as needed to prevent shortages.
  • Assist with the training of the commissary staff, fostering a positive team environment.
  • Work closely with other commissary staff to meet production schedules and quality standards, while maintaining clear communication with supervisors about progress, issues, or suggestions.
  • Help maintain training and certification by actively attending in‑person trainings and consistently utilizing digital training platforms.
  • Maintain, process, and complete orders through digital and in‑person order processing.
  • Monitor batch consistency, cooking times, temperatures, and product output to ensure optimal quality.
  • Other responsibilities as needed.
Guest Service
  • Greet and assist guests and team members in a friendly and courteous manner.
  • Provide knowledgeable answers to guest inquiries.
  • Promote and exemplify a high level of morale within the department and store, utilizing friendly but professional methods of honest and open communication with guests and team members.
  • Provide excellent guest service by acknowledging guests promptly and taking their orders accurately.
  • Display excellent problem‑solving skills and pride oneself in finding the best resolution that exemplifies the “Lee’s Way—doing what’s best for our guests, our team, and our company.”
  • Be familiar with, and assist customers with use of, Lee’s Marketplace website.
Product Handling
  • Ensure product freshness by watching for quality in production, rotating stock and checking expiration dates.
  • Unload deliveries and organize stock rooms as needed. Check all incoming items for quality and expiration dates.
  • Ensure that all perishable items are stored at the correct temperature and dry ingredients in a cool, dry place to prevent spoilage.
  • Maintain an accurate inventory of production supplies and ingredients using a first‑in, first‑out (FIFO) system to reduce waste and ensure older ingredients are used first.
  • Ensure that all recipes are followed accurately to maintain product consistency and quality.
  • Ensure that commissary goods are packaged appropriately to maintain freshness and comply with food safety regulations, using proper containers or wrapping materials to prevent contamination.
