Our client, a modern Vietnamese restaurant is seeking a creative and service-driven Bar Manager / Lead Mixologist to lead the development of our specialty cocktail program while remaining hands-on behind the bar during peak service hours.
This role requires a balance of creativity and operational leadership. The Bar Manager will design innovative cocktails that complement Crustacean’s modern Vietnamese cuisine while maintaining a polished, high-energy bar environment. During busy service periods, this leader will step behind the bar to execute cocktails with speed, precision, and hospitality.
The ideal candidate thrives in an upscale, high-volume setting and brings both mixology expertise and strong leadership skills.
Key Responsibilities Cocktail Program LeadershipLead the creation and evolution of Crustacean’s specialty cocktail program.
Develop seasonal cocktail menus inspired by modern Vietnamese flavors and ingredients.
Conduct recipe testing, costing, and standardization of cocktail builds.
Ensure cocktail presentation, balance, and consistency meet brand standards.
Stay current with industry trends and incorporate innovative techniques.
Work the bar during peak service periods to ensure flawless cocktail execution.
Maintain speed, accuracy, and composure during high-volume service.
Deliver engaging, guest-focused hospitality while crafting beverages.
Support bar team during rush periods and lead by example on the floor.
Oversee daily bar operations including opening/closing procedures.
Manage bar inventory, ordering, and vendor relationships.
Monitor beverage cost and maintain profitability targets.
Ensure compliance with health, safety, and alcohol service regulations.
Maintain a clean, organized, and efficient bar environment.
Recruit, train, and mentor bartenders and barbacks.
Develop training programs to elevate cocktail knowledge and service standards.
Foster a collaborative and high-performance bar culture.
Conduct ongoing coaching to ensure consistent beverage execution.
5+ years of bar leadership experience in upscale or high-volume restaurants.
Proven experience developing craft cocktail programs.
Strong knowledge of spirits, wine, and modern mixology techniques.
Ability to perform in a fast-paced, high-energy service environment.
Experience managing bar inventory, cost control, and vendor relationships.
Excellent leadership, communication, and guest engagement skills.
Responsible Beverage Service certification required.
