Position Summary
The Premium Concessions Manager is responsible for managing the execution of premium concessions operations within the Macon Centreplex. This role oversees all premium food and beverage concessions, including premium clubs, lounges, suites, bars, portable locations, and specialty service areas, ensuring exceptional guest experiences while maximizing operational efficiency and profitability. The Premium Concessions Manager will lead a team of supervisors and hourly staff across the venue, maintaining high standards of service and food quality.
This position requires a highly organized, hands-on leader who thrives in a fast-paced environment and can effectively manage multiple events and venues simultaneously.
This role will pay a yearly salary range of $66,000 - $68,000.

About The Venue
The Macon Centreplex is comprised of the Macon Coliseum and Macon City Auditorium and Atrium Health Amphitheater. The Macon Coliseum is home to the tenant hockey team, the Macon Mayhem, and seats 9,000 patrons. Family shows, concerts, trade shows, GHSA, among others, are frequent entertainment at the venue. The Macon City Auditorium opened in 1925 and has hosted iconic acts like Otis Redding, The Allman Brothers, and Little Richard.
The venue hosts concerts, weddings, private galas, and comedy shows, among other events, in its 2,500-seat space. The 10,000-capacity Atrium Health Amphitheater opened in Spring of 2024 with concerts, comedy shows, graduations, and community events.
- Oversee all premium concessions operations across the operation, including clubs, suites, lounges, bars, portable bars, and specialty concession locations.
- Manage day-to-day event operations, ensuring all premium locations are properly staffed, stocked, and prepared for service.
- Recruit, interview, train, coach, and develop supervisors and hourly team members to ensure a high-performing workforce.
- Create and implement training programs focused on guest service excellence, food safety, beverage standards, and operational procedures.
- Develop staffing plans and labor strategies to meet fluctuating business demands while controlling labor costs.
- Partner with culinary, warehouse, purchasing, and operations teams to ensure seamless event execution and product availability.
- Oversee inventory management, including ordering, receiving, transfers, monthly counts, and variance analysis.
- Monitor food and beverage costs, labor percentages, and operational expenses to achieve departmental financial goals.
- Ensure compliance with all local, state, and company regulations regarding food safety, sanitation, alcohol service, and workplace safety.
- Conduct regular inspections of all premium locations to ensure cleanliness, presentation, and operational readiness.
- Assist with menu planning, specialty events, VIP experiences, and premium hospitality initiatives.
- Investigate and resolve guest concerns promptly and professionally.
- Prepare operational reports, labor summaries, inventory reports, and other departmental metrics as requested.
- Participate in budgeting and forecasting for premium concessions operations.
- Collaborate with venue leadership to support special projects and strategic initiatives.
- Bachelor's degree in Hospitality Management, Business Administration, or a related field is preferred.
- 3-5 years in a leadership role within premium hospitality, concessions, clubs, suites, or luxury food and beverage operations positions preferred.
