Oxford Casino Hotel is part of Churchill Downs Incorporated, opened 2012, and offers 23 table games and over 900 slots, two restaurants (Ox Pub & Oxford Express) and a 107-room hotel with 6 suites.

Job Summary

The Prep Cook assists in producing and maintaining food items for line cooks or for direct consumption by guests. Responsibilities include proper and safe preparation of food items, adhering to set recipes and production levels, and maintaining high standards of cleanliness and safety.

Essential Duties and Responsibilities
  • Adhere to all Standard Operating Procedures (SOPs).
  • Demonstrate teamwork and positive interaction with all team members.
  • Execute tasks safely, accurately and repeatedly.
  • Complete all daily assigned tasks within set time frames.
  • Report any poor or inferior quality product to supervisor immediately.
  • Follow proper food handling in accordance with Serv Safe and Maine Health Code requirements.
  • Report facilities needs or equipment failures to supervisor or manager promptly.
  • Maintain confidentiality and security of relevant information, following applicable laws.
Job Specifications
  • Excellent interpersonal skills for working with diverse people and levels of authority.
  • Ability to multi-task efficiently.
  • Participate in routine preparation and cooking of food.
  • Assist in maintaining kitchen and dining area equipment and utensils safely.
  • Receive food deliveries, rotate and store properly to prevent spoilage.
  • Perform other duties of a similar or related level as needed.
  • Basic knowledge of kitchen operations and workflow (dishwasher, etc.).
  • Basic cooking skills, knife skills, food identification and fabrication skills.
Physical Requirements & Working Conditions

May need to lift up to 50 pounds occasionally. Requires prolonged standing, walking, bending and reaching to 6 feet. Ability to lift, carry, push up to 40 pounds. Normal hearing, vision, hand/eye coordination and manual dexterity are required.
