The Role

As Bar Manager, you’ll lead the smooth running of the bar, ensuring that every drink, every shift, and every guest interaction is exceptional. You will set the tone for atmosphere, coach and inspire your team, and take ownership of financial and compliance responsibilities to ensure the bar operates to the highest standards.

• Lead, train, and motivate the bar team to deliver excellent service and unforgettable guest experiences.
• Manage the atmosphere on shift—lighting, music, and temperature—creating a warm and inviting environment.
• Curate, monitor, and promote bestselling cocktails, wines, and seasonal drinks.
• Take a hands‑on role with daily briefs and debriefs, driving a culture of feedback and improvement.
• Provide on‑shift coaching to develop staff skills in speed, pouring accuracy, and guest interaction.
• Manage weekly rotas and station plans.
• Oversee financial performance—P&L, payroll, GP%, staff wage %, cash/card variances, and wastage.
• Maintain accurate stock control, ordering, and supplier relationships, including bar consumables and disposables.
• Ensure compliance with licensing laws, health & safety, COSHH, fire procedures, and food safety standards.
• Conduct weekly venue audits as in‑house health checks.
• Collaborate closely with the kitchen, reservations, events team, security, and floor managers to ensure seamless service.
• Act as a charismatic floor presence—personally engaging with guests and setting the performance culture for your team.

• 2+ years’ experience as a Bar Manager or Assistant Manager in a high-end, high-volume venue.
• A charismatic leader who inspires confidence and motivates others.
• Excellent knowledge of cocktails, wines, and premium spirits.
• Strong organisational, problem‑solving, and financial management skills.
• Creative flair with a passion for food & beverage trends.
• Highly attentive and observant, with exceptional interpersonal skills.
• Confident under pressure and able to maintain the highest standards in a fast‑paced environment.
• Flexible availability, including late nights, weekends, and holidays.
