Manage the breakfast operation to ensure the appropriate breakfast prep and lunch prep is completed for the next day’s expected breakfast volume and banquet activity;
Supervise the weekly specialty breakfast item program to ensure maximum guest satisfaction for weekday guests;
Supervise the execution of Banquet Lunches to ensure production guidelines are followed and group time schedules are met;
Ensure daily and weekly cleaning schedules are adhered to by the cooks and assign tasks as needed;
Prepare weekly and daily menus to ensure variety and prepare for next day’s lunch considering banquet activity
